Tony Chachere's Creole Foods began in 1972 as a retirement hobby for South Louisiana Chef Tony Chachere. Today, it is still produced in Opelousas, LA and is one of the most recognizable brands in the U.S. offering a variety of products including rice dinner boxes, injectable marinades and their Tony Chachere's Original Creole Seasoning. Jambalaya is a Cajun/Creole dish made typically in a large pot (cast-iron) from a mixture of Cajun meats, rice, and seasonings blended to produce a delicious dish. Similar in many ways to Spanish paella, the term "jambalaya" is derived from the Spanish 'jamon' for ham. Jambalaya is pronounced 'jahm-buh-LIE-uh' or 'jum-buh-LIE-uh'.
